Zuni Chicken and Garlic Mashed Potatoes

Chuck's friend and fellow food blogger, Chad, offered me this Zuni Cafe Chicken recipe when I had a hankering for roast chicken. I paired it up with Chuck's garlic mashed potatoes, and bam! great dish. Super easy, super yummy.


Ingredients:
1 Whole chicken
Salt and pepper
4 sprigs of fresh rosemary
1 pound potatoes
5 cloves of garlic, peeled (more if desired)
1 cup Parmesan cheese
1/2 cup milk
3 tablespoons butter

1 day ahead:
1. Have a sexy man clean and gut chicken for you (you know I'm not putting my hand in that thing!).

2. Sprinkle all sides generously with salt and pepper.

3. Using your finger, lift skin under breasts and on each leg to form a pocket. Slide sprig of rosemary in each pocket.

4. Cover chicken and refrigerate.

Day of fooding:

1. Preheat oven to 450 degrees F.

2. Sear chicken, breast-side down in a saute pan for 4 minutes, to crisp skin.

3. If pan can be put in the oven, turn the chicken over and place saute pan in the oven. If saute pan cannot be put in the oven, transfer chicken to a roasting pan, breast-side up. Cook through, approximately 45 minutes.

4. While chicken is roasting, start making the mashed potatoes. Peel potatoes and roughly chop. Add peeled garlic cloves and potatoes to a large pot of water and boil until fork-tender.

5. Drain water from the pot of potatoes. Add milk, Parmesan cheese, and butter to pot. Using a fork, masher, or hand mixer, mash together all ingredients.

6. When chicken is cooked, remove from oven and let rest for 5 minutes. Slice chicken and serve with a side of garlic mashed potatoes.
